Variety Christmas Salad

Delicious served with chicken, turkey or boiled gammon.

1 lb/ 450 g unpeeled cucumber
4 oz/ 125 g Cheddar cheese
1 can (15 1/2 oz/ 439 g) whole chestnuts, drained.
3 tablespoons well seasoned French Dressing

1. Wash and dry cucumber. Cut into 3 inches/ 7.5 cm fairly narrow sticks. Put into bowl.
2. Shave cheese into small, paper-thin slices. Break up chestnuts into fairly large pieces.
3. Add cheese and chestnuts to bowl with dressing.
4. Toss well to mix, cover and chill 1 hour in the refrigerator before serving.

Tortellini

Traditional dish served during christmas in Northern Italy.

1 packet of tortellini
125g butter
1/4 cup heavy cream
1 cup grated parmesan cheese
freshly ground pepper
1 tablespoon salt

1. Boil the tortellini in a large pan of boiling salted water for apporximately 10 minutes until tender, stirring occasionally.

2. Drain. Place cream, 3/4 of the cheease and butter into pan and bring to boil.

3. Pour sauce over tortellini.

4. Sprinkle with parsley and rest of cheese.

Sweet Potatoes

1/2 Cup Icing Sugar
3 cups Mashed sweet potatoes
1 cup white sugar (may use less)
2 eggs
1 tsp. vanilla
1 stick melted butter or margarine

Mix and put in buttered baking dish.

Mix the following together and add to top of sweet potatoes:

1 cup brown sugar
1/3 cup flour
1cup finely chopped pecans
1/3 cup melted butter

Bake 30 minutes in 350 degree oven.
